- Eggplants 3 pieces
- Olive Oil to taste
- Sherry Vinegar 5 fl oz
- Clear Honey 5 fl oz
- Raisins 0 oz
- Parsley leaves 3 tablespoons
- Roasted pine nuts 0 oz
- Yogurt to taste
Step-by-Step Guide
Step 1
Preheat a grill pan or barbecue.
Step 2
Peel and cut the eggplants into pieces. Brush with a small amount of olive oil, season, then place on the grill and cook.
Step 3
Transfer to a plate and let cool to room temperature.
Step 4
Bring the sherry vinegar and honey to a boil in a small saucepan.
Step 5
Add the raisins and cook for 5-10 minutes. Set aside.
Step 6
Drizzle the dressing over the eggplants, sprinkle with parsley and pine nuts, and serve with yogurt.
