Grilled Eggplant Salad
Ingredients
- Eggplants 1 piece
- Olive Oil 3 tablespoons
- Meyer Lemon Juice 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Dried Rosemary a pinch
- Fresh basil leaves a pinch
- Ground Dried Garlic a pinch
- Green peppercorns 5 pieces
- Mixed salad greens 2 bunches
- Pistachios 2 tablespoons
- Hard Cheese 0 oz
Step-by-Step Guide
Step 1
Wash the eggplant and slice it into rounds. Sprinkle with salt and let it sit for about 15 minutes. Then rinse with cold water and dry with paper towels. Grill the eggplant on a grill pan.
Step 2
Prepare a marinade from olive oil, lemon juice, zest, and spices. Pour it over the eggplant. Marinate for 20–30 minutes.
Step 3
Slice the hard cheese into thin slices.
Step 4
On a plate, arrange the salad greens and marinated eggplant. Sprinkle with cheese and pine nuts.
Step 5
You can use the marinade from the eggplant as a dressing.
