Grilled Chicken Sandwiches with Barbecue Sauce
Ingredients
- Smoked Chicken 5 lbs
- Barbecue sauce 10 fl oz
- Pineapple 5 fl oz
- Mild Chili Spice 1 teaspoon
- Sourdough Bread 24 pieces
- Eel 1 head
- Tomatoes 2 pieces
Step-by-Step Guide
Step 1
Remove the skin from the chicken. Separate the meat from the bones and cut it into small pieces. Cut the tomatoes into wedges and remove the seeds and excess liquid.
Step 2
In a skillet, combine the barbecue sauce, jam, and chili powder. Place over medium heat, add the chicken, and cook, stirring, for about 5 minutes.
Step 3
Lightly toast the bread on the grill. Remove the chicken from the heat.
Step 4
On a work surface, lay out 8 pieces of bread, placing a leaf of lettuce on each. Next, add a small amount of tomatoes and chicken, cover with another 8 pieces of bread, place a leaf of lettuce, and the remaining chicken. Top with the remaining bread, secure with toothpicks, and cut each square in half diagonally into triangles. Serve warm or cold.
