Green Salad with Shrimp and Mango
Ingredients
- King Prawns 5 oz
- Mango 1 piece
- Green Butter 5 oz
- Marinated cherries 6 pieces
- Honey 0 oz
- Olive Oil 6 tablespoons
- Black sesame seeds 2 tablespoons
- Meyer Lemon Juice 2 tablespoons
- Basil 1 bunch
- Butter 0 oz
- Garlic 3 cloves
- Pistachios 0 oz
- Paprika a pinch
Step-by-Step Guide
Step 1
If the honey is solid, melt it (you can place the honey in a small bowl, fill a larger bowl with hot water, and set the bowl with honey inside). Add olive oil, sesame oil, lemon juice, and paprika to the melted honey. Stir until smooth.
Step 2
Finely chop the garlic. Heat a skillet over high heat, add butter and vegetable oil. When the oil is hot, add the garlic. Once the garlic is golden, add the shrimp. Fry until golden brown, usually takes about 2–3 minutes.
Step 3
While the shrimp are frying, cut the mango into small pieces. Arrange the green lettuce, mix it with the dressing, and top with mango and chopped basil, reserving the top leaves for garnish.
Step 4
Place the shrimp on the salad, add the nuts (pine nuts or cashews), and garnish with basil. Serve while hot. Ideally paired with white wine.
