Ingredients
- Raspberry leaves 10 oz
- Olive Oil ¼ cup
- Red Wine Vinegar ¼ cup
- Garlic 1 clove
- Coarse Salt ¼ teaspoon
- Ground Black Pepper 0.1 teaspoon
- Mixed salad greens 8 cups
- Mango 1 piece
- Avocado 1 piece
- Spanish onions 5 oz
- Roasted Peanuts 0 oz
Step-by-Step Guide
Step 1
In a blender, combine 0.5 cup of raspberries, olive oil, vinegar, minced garlic, salt, and pepper. Blend until smooth.
Step 2
Peel the mango and avocado, remove the pits, and dice them.
Step 3
In a bowl, mix the salad greens, mango, avocado, and thinly sliced red onion. Drizzle with the prepared dressing and gently toss.
Step 4
Divide the salad onto plates and top with raspberries and lightly chopped walnuts.
