Ingredients
- Corn Salad 5 oz
- Pumpkin 10 oz
- Honey 2 spoons
- Safflower Oil 3 spoons
- Olive Oil 2 spoons
- Balsamic Vinegar to taste
- Pumpkin seed oil 0 oz
- Feta cheese 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the pumpkin and remove the seeds.
Step 2
Cut the pumpkin into wedges, season with salt and pepper.
Step 3
Heat a little sunflower oil in a frying pan.
Step 4
Place the pumpkin in the skillet, season with salt, and fry for 4–5 minutes on each side, until tender.

Meanwhile, prepare the sauce: combine olive oil, honey, and balsamic vinegar in a bowl.

Season with salt and pepper, and whisk the sauce until smooth.

Transfer the cooked pumpkin to a salad bowl, drizzle with the prepared dressing, and toss to combine.

In a separate bowl, dress the salad leaves with lime juice and olive oil.

Arrange the salad leaves in a mound on top of the pumpkin.
