Green Salad with Mozzarella and Walnuts
Ingredients
- Olive Oil 0 fl oz
- Melted Cheese 5 oz
- Arugula 1 bunch
- Courgette 1 piece
- Parsley 2 stems
- Basil 2 stems
- Walnuts 0 oz
- Onion 1 piece
- Salt to taste
Step-by-Step Guide
Step 1
Wash the greens, spread them on a towel to absorb excess moisture.
Step 2
Lightly toast the walnuts. Set aside a few walnut halves for garnish. Blend the toasted walnuts into crumbs. Add salt and vegetable oil, and blend again to make a walnut sauce.
Step 3
Slice the onion into thin rings, rinse under cold water, and drain in a colander. Wash the cucumber, and if necessary, peel it (sometimes the skin can be thick and unappetizing). In a salad bowl, place the arugula, leaves of parsley and basil (without stems), sliced cucumber, and onion. Gently mix by hand and distribute onto plates.
Step 4
Drizzle with walnut sauce on top.
Step 5
Add the mozzarella. Garnish with walnuts.
