Green Salad with Kohlrabi and Pomegranate Seeds
Ingredients
- Celery stalk 2 pieces
- Kohlrabi 10 oz
- Black Pomegranate Molasses 1 piece
- Arugula 5 oz
- Champagne Vinegar 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Sugar 0.1 teaspoons
- Dijon Mustard ½ teaspoons
- Olive Oil 3 tablespoons
Step-by-Step Guide
Step 1
Peel the kohlrabi. Using a mandoline, thinly slice it along with the celery. Then cut the kohlrabi slices into matchsticks.
Step 2
Remove the seeds from the pomegranate — you will need 0.5 cup.
Step 3
In a bowl, combine the pomegranate seeds, celery, kohlrabi, and arugula.
Step 4
In a small bowl, mix the vinegar, salt, pepper, sugar, and mustard. While whisking, gradually add the oil. Drizzle the dressing over the salad and toss.
