Ingredients

  • Green Beans 15 oz
  • Iceberg Lettuce 5 oz
  • Pears 2 pieces
  • Brazil Nuts 0 oz
  • Lemon ½ piece
  • Olive Oil 2 tablespoons
  • Nut Oil 2 tablespoons
  • Sesame Seeds 2 teaspoons
  • Ground Black Pepper a pinch
  • Sea Salt ½ teaspoon
  • Coarse Salt a pinch

Step-by-Step Guide

Step 1

Thaw the green beans and boil them in salted water for 10 minutes, then drain the water and place the pot with the beans in a bowl filled with ice. The beans will retain their bright green color due to the sudden temperature change.

Step 2

Add olive oil to the beans.

Step 3

Squeeze the juice from half a lemon.

Step 4

Slice the pears thinly and drizzle with lemon juice to prevent browning.

Step 5

Lightly toast the nuts in a dry skillet or in the oven, then crush them in a mortar, but not too finely.

Step 6

Also lightly toast the sesame seeds over low heat.

Step 7

Crush a large pinch of coarse sea salt and pepper in the mortar.

Step 8

Mix the beans and pears with the lettuce leaves, season with the salt and pepper mixture, add the nut oil, and mix again.

Step 9

Transfer the salad to a serving dish, sprinkle with nuts and sesame seeds.
