Green Salad with Avocado and Corn
Ingredients
- Romaine lettuce ½ piece
- Marinated cherries 5 oz
- Sweet Corn Sticks 15 oz
- Avocado 1 piece
- Lime Juice 2 tablespoons
- Mild Chili Spice ¼ teaspoon
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a bowl, combine the sliced romaine lettuce, corn kernels, and halved cherry tomatoes.
Step 2
Add the peeled and diced avocado, but only ¾ cup of it.
Step 3
Transfer the remaining avocado to a blender and add ¾ cup of water, lime juice, and chili powder. Season with salt and pepper. Blend until smooth.
Step 4
Pour the dressing over the salad and gently toss to combine.
