- Raisins 5 oz
- Chopped almonds 5 oz
- Watercress 1 bunch
- Eel 1 piece
- Cognac 3 tablespoons
- Mustard Greens 1 tablespoon
- Vinegar essence 1 tablespoon
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Soak the raisins in cognac, add a little warm water, and let sit for 1 hour.
Step 2
Sort through the watercress, rinse, and dry.
Step 3
Rinse and dry the lettuce and chop it.
Step 4
Remove the raisins and combine them with the salad.
Step 5
In the infusion from the raisins, add mustard, vegetable oil, vinegar, salt, and ground black pepper, and mix thoroughly.
Step 6
Toast the almonds in a dry skillet. Mix with the salad. Dress with the cognac sauce.
