Ingredients

  • Green Beans 20 oz
  • Olive Oil 3 tablespoons
  • Garlic Scapes 2 cloves
  • Balsamic Vinegar 1 tablespoon
  • Fresh Mint 3 tablespoons

Step-by-Step Guide

Step 1

Boil the green beans in salted boiling water for 5-6 minutes. Drain and rinse under cold running water. Shake to remove excess water. Dry with a kitchen towel.

Step 2

Heat 1 tablespoon of oil in a pan. Add the garlic and sauté until golden brown. Transfer to a plate along with the cooking oil and let cool.

Step 3

Mix the remaining oil, vinegar, mint, salt, and pepper. Drizzle this mixture over the green beans and toss well. Arrange on a serving platter and top with the garlic and cooking oil.
