Green Bean and Cherry Tomato Salad with Shallot Vinaigrette

Description
Add the beans to the cherry tomatoes just before serving, otherwise they will lose their color.
Ingredients
- Red cocktail cherry 15 oz
- Shallot 1 head
- Chinese green beans 15 oz
- Red Wine Vinegar 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 5 fl oz
- Fresh basil leaves to taste
Step-by-Step Guide
Step 1
Trim the ends off the beans and cut them into small pieces. Place in a pot of boiling salted water and cook until tender, about 5 minutes. Transfer to ice water or rinse under cold water. Drain and place in a bowl. Cut the cherry tomatoes in half and place in another bowl.
Step 2
For the vinaigrette, chop the shallot and place it in a small bowl. Add the vinegar, salt, and pepper. Add to the cherry tomatoes and mix well.
Step 3
Before serving, combine with the beans and basil.
