Ingredients

  • Fresh Yellow Bell Pepper 1 piece
  • Cucumber 1 piece
  • Cherry Tomatoes 4 pieces
  • Pitted olives 4 pieces
  • Feta cheese 0 oz
  • Extra virgin olive oil 1 tablespoon
  • Lemon Juice ½ tablespoon
  • Dried Oregano ¼ teaspoon
  • Garlic 1 clove
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the bell pepper in half lengthwise, remove the seeds and membranes. Cut each half into quarters.

Step 2

Slice the cucumber into rounds, halve the tomatoes, cube the feta cheese, and mince the garlic.

Step 3

Mix the oil, lemon juice, oregano, garlic, and salt.

Step 4

On the skewers, thread a cucumber round, a tomato half cut side up, then the feta cheese and an olive. Insert the skewers into the pepper boats.

Step 5

Place the boats on a large plate and drizzle with the dressing.
