Ingredients
- Salad Potatoes 20 oz
- Scallions 2 stalks
- Capers 2 teaspoons
- Pitted olives 10 pieces
- Dill 1 tablespoon
- Feta cheese 5 oz
- Olive Oil 1 tablespoon
- Sugar ½ teaspoon
- Meyer Lemon Juice 1 tablespoon
- Natural Yogurt ¼ cup
- Ocean salt ½ teaspoon
- Ground Black Pepper ¼ teaspoon
Step-by-Step Guide
Step 1
Peel the potatoes, cut them into small pieces, and boil in salted water until tender. Drain and let cool. Transfer to a large bowl.
Step 2
In a small bowl, dissolve the sugar in the lemon juice and add the olive oil, yogurt, salt, and pepper. Mix well.
Step 3
To the bowl with the potatoes, add the chopped green onions, capers, halved olives, crumbled feta, and finely chopped dill. Mix well. Drizzle with the dressing and mix again.
