Ingredients
- Chicken Liver 25 oz
- Onion 1 head
- Cognac 1 tablespoon
- Red Grape Juice 1 tablespoon
- Goose fat 0 oz
- Salt to taste
- White Pepper (whole) to taste
- Serviceberries 5 oz
- Orange juice concentrate 5 fl oz
- Orange zest 1 teaspoon
- Ground clove to taste
Step-by-Step Guide
Step 1
Melt the fat and sauté the liver with chopped onion. Then blend the mixture, adding cognac, wine, salt, and pepper. Chill the puree.
Step 2
Mix the orange juice with mashed blackberries. Add cloves and bring to a boil. Combine with orange zest.
Step 3
Place the liver puree on salad leaves and drizzle with sauce. Garnish with blackberries.
