Fusilli Salad with Tuna and Zucchini
Ingredients
- Pasta shells 10 oz
- Canned tuna in its own juice 5 oz
- Courgette 1 piece
- Potato 1 piece
- Orange Bell Peppers 1 piece
- Scallions 1 piece
- Capers ¼ cup
- Olive Oil 2 tablespoons
- Meyer Lemon Juice 2 tablespoons
- Fresh basil leaves 3 pieces
- Chopped Sage Leaves 2 teaspoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cook the pasta in boiling salted water until al dente. Drain and cool.
Step 2
In a large bowl, combine the pasta, tuna (drained), diced zucchini and pepper, chopped tomato, finely chopped green onion, and capers.
Step 3
In another bowl, mix olive oil, lemon juice, chopped basil, parsley, and black pepper. Drizzle the dressing over the salad and mix well.
