Fusilli Salad with Beans and Tomatoes
Ingredients
- Pasta shells 15 oz
- Olive Oil ½ cup
- Garlic 1 clove
- Balsamic Vinegar ¼ cup
- Chopped almonds ½ cup
- Salt 1 teaspoon
- Ground Black Pepper to taste
- Tomatoes 4 pieces
- Canned Baby Beets 15 oz
Step-by-Step Guide
Step 1
Cook the pasta in boiling salted water until al dente. Drain and cool under cold water.
Step 2
In a blender, combine olive oil, vinegar, minced garlic, and walnuts. Blend until smooth. Season with salt and pepper.
Step 3
Cut the tomatoes in half and remove the seeds. Chop into small pieces and transfer to a bowl. Add the beans and dressing, and mix well. Then add the drained pasta and mix again. Let sit for 30 minutes and serve.
