Fruit Salad with Grape Seed Oil
Ingredients
- Persimmon 6 pieces
- Mandarins 6 pieces
- Grapefruits 1 piece
- Black Pomegranate Molasses 1 piece
- Grapeseed Oil 3 tablespoons
- Honey 2 teaspoons
- Dijon Mustard 1½ tablespoons
- Tarragon ¼ teaspoon
- Lemon-Pepper Mix a pinch
- Corn Salad to taste
Step-by-Step Guide
Step 1
Carefully peel the persimmons and cut the flesh into wedges. Remove the seeds (if any).
Step 2
Peel the tangerines and remove the membrane from each segment. For the grapefruit, use a sharp knife to cut off the peel so that the flesh is visible. Cut out the 'fillets' from the segments. While cutting, hold the grapefruit over a bowl to catch the juice.
Step 3
Place the peeled tangerines, grapefruit, and persimmon wedges in a bowl and mix to allow the fruits to soak in each other's juices.
Step 4
Prepare the pomegranate.
Step 5
Using a slotted spoon, retrieve the pieces of tangerine, grapefruit, and persimmon. Save the juice that has dripped from the fruits.
Step 6
In a bowl, combine the corn salad, fruits, and pomegranate seeds.
Step 7
Mix the grape seed oil, mustard, honey, tarragon leaves, and pepper mix, and add to the salad.
