This is a great salad to accompany grilled salmon and chicken.
Ingredients
- Olive Oil 2 tablespoons
- Orange juice concentrate 2 tablespoons
- Apple Cider Vinegar 1 tablespoon
- Shallot 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Couscous 1¼ cups
- Nectarines 2 pieces
- Chopped almonds 2 tablespoons
- Fresh Berries 5 oz
Step-by-Step Guide
Step 1
Cook the couscous according to the instructions. Let it cool.
Step 2
In a large bowl, mix the olive oil, orange juice, vinegar, and chopped shallot. Season with salt and pepper.
Step 3
Add the couscous, finely chopped nectarines, and berries. Gently mix.
Step 4
Sprinkle with almonds and serve.
