Fresh White Mushroom and Celery Salad

Ingredients

  • Celery stalk 5 pieces
  • Salt to taste
  • Aspen mushrooms 10 oz
  • Olive Oil 1¼ tablespoons
  • Meyer Lemon Juice 1 tablespoon
  • Ground Black Pepper a pinch
  • Parmesan Cheese to taste

Step-by-Step Guide

Step 1

Using a mandoline, slice the celery stalks very thinly, holding them at a 45-degree angle.

Step 2

In a bowl, mix 1 liter of water with 1 tablespoon of salt and stir until the salt dissolves. Add the celery and let it sit for 15 minutes. Transfer to a strainer and then lay it out in a single layer on a kitchen towel. Gently roll the towel and let it sit for 5 minutes.

Step 3

Wipe the mushrooms with a paper towel and remove any dirt. Use a sharp knife to cut away any bad spots.

Step 4

Using a mandoline, slice the mushrooms very thinly and place them in a bowl. Add the celery, lemon juice, oil, pepper, and 0.25 teaspoons of salt. Gently mix with your hands.

Step 5

Divide the salad among 6 plates and sprinkle with Parmesan cheese to taste before serving.
