
Fresh Vegetable Salad

Description
The 'Freshness' salad as made in a common American grocery store. Ingredients: Fresh cabbage, fresh carrot, fresh beet, sunflower oil, fresh parsley, table salt, vinegar, sugar, ground black pepper. (Don't be alarmed by the letters 'SP GM' - it simply means 'store brand'.) :-)
Ingredients
- Cabbage 10 oz
- Carrot 1 piece
- Beet 1½ pieces
- Parsley ½ bunch
- Sunflower Oil 2 tablespoons
- Sugar ½ teaspoon
- Salt 0.7 teaspoons
- 6% Vinegar 2 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
All vegetables and root vegetables should be fresh! The amounts are approximate, so trust your taste! Instead of 2 tablespoons of 6% vinegar, you can use 1 tablespoon of 9% vinegar, again, to taste, especially since the percentages on vinegar are not always accurate. We had a large carrot and a medium beet, so if your sizes differ, adjust the quantities accordingly.
Step 2
Chop the cabbage, beet, and carrot (using a grater, vegetable slicer, or knife—depending on your capabilities and needs), also chop the parsley—and mix everything together. Add sunflower oil, vinegar, sugar, salt, and black pepper. Use just a little bit of pepper! We added a mix of aromatic and black pepper—it’s pleasant, although this is a deviation from the original recipe. Sugar, although it may seem somewhat out of place in a salad, adds a nice flavor, especially since this salad contains beet, and the grocery store indeed makes it with sugar.
Step 3
After preparing, do not eat immediately—place it in a cool area (a window, balcony, or in the refrigerator during summer) to eliminate the unpleasant aftertaste of fresh beet. One hour in the cool will be quite sufficient. In the grocery store, the salad is kept in the refrigerator, so the purchased version does not have this aftertaste. Enjoy your meal!
