Ingredients
- Orange Bell Peppers ½ piece
- Mixed salad greens 5 oz
- Salt to taste
- White Pepper (whole) to taste
- Marinated cherries 6 pieces
- Shallot 1 head
- Grated Ginger Root 1 piece
- Courgette ½ piece
- Garlic 1 clove
- Rice Vinegar for Sushi 1½ tablespoons
- Ketchup 1 tablespoon
- Water 1 tablespoon
- Soy Sauce 3 tablespoons
- Vegetable Oil 5 fl oz
Step-by-Step Guide
Step 1
In a small bowl, mix the chopped shallot, grated ginger, minced garlic, rice vinegar, ketchup, water, vegetable oil, and soy sauce.
Step 2
Remove the seeds from the bell pepper and cut it into thin strips. Place in ice water for a while until the pieces curl up. This will take a few minutes.
Step 3
In a bowl, place the salad greens and mix with 4-6 tablespoons of the dressing. Add salt to taste. Divide the salad onto 2 plates, topping with halved cherry tomatoes, thinly sliced cucumber, and strips of bell pepper.
