Ingredients
- Garlic 1 clove
- Ground ancho chili pepper 1 piece
- Galangal 4 pieces
- Lime Juice 2 tablespoons
- Rice Vinegar for Sushi 1 tablespoon
- Fish Oil 1 tablespoon
- Mirin 1½ tablespoons
- Sugar 1 teaspoon
- Smoked haddock fillet 10 oz
- Vegetable Oil 3 tablespoons
- Squid 10 oz
- Scallops 8 pieces
- King Prawns 8 pieces
- Avocado 1 piece
- Snap Peas 5 oz
- Peanut Sprouts 0 oz
- Spanish onions ½ head
- Baby Bok Choy 5 oz
Step-by-Step Guide
Step 1
Using a mortar and pestle, crush the galangal into small pieces. Add the chopped chili and minced garlic, and turn everything into a paste. Transfer to a small bowl with lime juice, rice vinegar, fish sauce, mirin, sugar, and vegetable oil. Mix well.
Step 2
Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Add the salmon fillet and fry for 1 minute on each side. Transfer to a plate and cover with foil.
Step 3
Pour more oil into the skillet and sauté the diced squid, scallops, and prawns until cooked. Transfer to a plate and cover with foil. Drizzle the seafood with 2 tablespoons of the dressing.
Step 4
Combine the bok choy and seafood. Divide the fish into 2–3 pieces per person. Arrange the salad on plates, top with the fish, and drizzle with the remaining dressing.
