Fresh Pea and Corn Salad
Ingredients
- Apple Cider Vinegar 10 fl oz
- Sugar 5 oz
- Canola Oil 10 fl oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Peas 15 oz
- Corn Cobs 2 pieces
- Celery stalks 2 pieces
- Green Bell Pepper 1 piece
- Onion 1 head
- Canned Green Beans 5 oz
Step-by-Step Guide
Step 1
Combine vinegar, sugar, oil, salt, and pepper in a large bowl; set aside.
Step 2
Bring salted water to a boil in a large pot. Add peas and cook for 1-2 minutes until bright green. Drain and place in a bowl of ice water.
Step 3
Transfer the peas to a bowl, add the remaining ingredients; mix by shaking the bowl. Let sit for 30 minutes before serving.
