- Pickled Chanterelles 10 oz
- Lime Juice 1 tablespoon
- Cream (40%) 5 fl oz
- Mascarpone Cheese Unagrande 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Chives 1 bunch
- Tarragon to taste
Step-by-Step Guide
Step 1
Thoroughly wash the mushrooms and clean them. Pat dry with a towel. Slice thinly and arrange on plates in a fan shape. Drizzle with lime juice to prevent browning.
Step 2
In a small bowl, beat the mascarpone and cream with a mixer until creamy. Season with salt and pepper. Add finely chopped chives. Add a bit of finely chopped tarragon leaves and mix well. Spoon the sauce over the mushrooms and serve.
