Fresh arugula and vegetable salad with yogurt dressing
Ingredients
- Arugula 2 bunches
- Iceberg Lettuce ¼ head
- Red Onion ¼ piece
- Tomato 1 piece
- Cucumber ½ piece
- Bell pepper ¼ piece
- Olives in oil 10 pieces
- Basil leaves 6 pieces
- Natural Yogurt 5 oz
- Olive Oil to taste
- Sea Salt to taste
Step-by-Step Guide
Step 1
Tear the iceberg lettuce leaves randomly and place them in the center of the plate.
Step 2
Scatter the arugula on top in a random manner.
Step 3
Arrange all other ingredients around the salad.
Step 4
Cut the cucumber lengthwise into quarters, then cut them in half (coarsely).
Step 5
Cut the tomato into large pieces. (The tomatoes should be juicy, ripe, and sweet; do not use 'rubber tomatoes' — imported and tasteless ones — for this salad). Some of the tomato can be placed on the lettuce leaves to give your salad a heartier appearance.
Step 6
Slice the bell pepper into strips.
Step 7
Slice the onion into thin half-rings.
Step 8
On the free part of the plate, arrange the sliced pepper, onion, olives, and yogurt.
Step 9
To finish, sprinkle with a pinch of sea salt and drizzle with olive oil.
Step 10
Before serving, gently mix all the ingredients. The salad pairs excellently with freshly squeezed juice or a glass of dry red wine. Enjoy your meal!
