Description

Raisins can be soaked in orange liqueur or rum beforehand. Strawberry coulis can be prepared in advance — it keeps well in a sealed container for several days. The filling can also be made the night before — it's even easier to spread on the bread when chilled!

  • Meyer Lemon Juice 0 fl oz
  • Orange juice concentrate 0 fl oz
  • Semi-soft cream cheese 0 oz
  • Raisins 2 tablespoons
  • Orange zest 1 tablespoon
  • Ground Cinnamon 1 teaspoon
  • Toasts 6 pieces
  • Egg white 2 pieces
  • Milk 5 fl oz
  • Strawberry 5 oz
  • Mint Leaves 6 pieces
  • Powdered Sugar 2 tablespoons

Step-by-Step Guide

Step 1

For the filling, peel the apple and cut it into cubes. Heat 1 tablespoon of butter in a pan, add the chopped apple, 20 grams of lemon juice, and all the orange juice, and simmer the apple cubes until soft. Drain the cubes in a colander, then mix them with the softened cream cheese, orange zest, raisins, and a pinch of cinnamon.

Step 2

For the French toast, cut circles from the slices of bread using a cutter. Distribute the filling between three circles and cover them with the remaining pieces. Mix the milk with the eggs and cinnamon, pour the mixture into a deep plate, and soak the toasts for 10 minutes, flipping them once during this time. Heat the remaining butter over high heat and fry the toasts on both sides until golden brown.

Step 3

For the strawberry coulis, set aside a few berries for garnish, and puree the rest with powdered sugar and 1 teaspoon of lemon juice. Strain the sauce through a sieve.

Step 4

To serve, spread some coulis on the bottom of a plate. Place the hot toast on top. Garnish with the reserved strawberries and mint leaves.
