French Potato Salad
Ingredients
- Red potatoes 45 oz
- White Wine Vinegar 6 tablespoons
- Extra virgin olive oil 6 tablespoons
- Dijon Mustard 1 tablespoon
- Red Onion 1 head
- Fresh Tarragon 0 oz
- Salt 1 teaspoon
- Ground Black Pepper 1 teaspoon
Step-by-Step Guide
Step 1
Wash the potatoes well using a vegetable brush and slice them into rounds about 0.5 cm thick. Transfer them to a pot with 3.5 liters of water, bring to a boil, and cook for about 5 minutes. Drain the water, then add half a teaspoon of salt and pepper, 3 tablespoons of vinegar to the potatoes, and gently mix. Set aside to cool for 30 minutes.
Step 2
Meanwhile, finely chop the red onion and tarragon. In a small bowl, mix the remaining vinegar, pepper, and salt, oil, and mustard. Drizzle this mixture over the cooled potatoes, sprinkle with onion and tarragon, and mix again. Transfer to a large dish and serve.
