- Blue Cheese 5 oz

- Roquefort cheese 0 oz
- Meyer Lemon Juice 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Paprika 2 teaspoons
Step-by-Step Guide
Step 1
Wash the leaves of endive and escarole and tear them into pieces.
Step 2
Cut the cheeses — cheddar, comté, and cantal — into cubes.
Step 3
To make the dressing, mash the roquefort with a fork, mix it with the cream and lemon juice. Add salt, ground pepper, and paprika.
