Focaccia sandwiches with arugula, mozzarella, pickled red onion, and tomatoes
Ingredients
- Tomatoes 3 pieces
- Spanish onions 1 head
- Red Wine Vinegar 3 tablespoons
- Ground Black Pepper to taste
- Arugula 5 oz
- Ciabatta 1 piece
- Mayonnaise 1 tablespoon
- Salt to taste
- Melted Cheese 10 oz
Step-by-Step Guide
Step 1
Slice the tomatoes into thin rounds. Cut the onion into rings. Place everything in a glass dish and pour the vinegar over. Season with pepper and a little salt. Gently mix and let marinate for 30 minutes.
Step 2
Cut the focaccia into 4 pieces, then slice each piece in half lengthwise.
Step 3
On 4 halves of bread, layer the tomatoes, onion, arugula, and thinly sliced mozzarella. Spread mayonnaise on the other halves and close the sandwiches. Press down lightly.
