Festive Cabbage Salad
Ingredients
- Red Currant 10 oz
- White Cabbage 10 oz
- Carrot 10 oz
- Leek 1 piece
- Dried Apricots 0 oz
- Dried cranberries with sugar 0 oz
- Yogurt powder 5 oz
- Orange zest 1 piece
- Red Curry Powder ½ teaspoon
- Fresh basil leaves to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the carrot and grate it on a coarse grater. Finely chop the leek. Cut the dried apricots into small pieces. In a large bowl, mix the carrot, leek, dried apricots, and dried cranberries.
Step 2
Finely chop the red and green cabbage (you can use a food processor). Add it to the other ingredients and mix well.
Step 3
For the dressing, mix yogurt, the zest of half an orange, the juice of one whole orange, curry powder, and finely chopped basil in a separate deep bowl. Mix thoroughly.
Step 4
Season the salad with salt and pepper, dress it with the prepared sauce, mix, and chill slightly before serving.
