Fennel, arugula, and smoked trout salad with horseradish dressing
Ingredients
- Sour Cream 1½ tablespoons
- Olive Oil 3 teaspoons
- Horseradish Leaves to taste
- Dill 2 teaspoons
- Arugula 5 oz
- Champagne Vinegar 1¼ teaspoons
- Fennel 5 oz
- Spanish onions 5 oz
- Cold-smoked trout 5 oz
Step-by-Step Guide
Step 1
In a bowl, mix the sour cream, half of the olive oil, horseradish, dill, and half of the vinegar. Season with salt and pepper.
Step 2
In a large bowl, combine the arugula, sliced fennel, and onion. Add the remaining oil and vinegar, season with salt and pepper, and mix well.
Step 3
Divide the salad between 2 plates and top with diced fish. Drizzle with the horseradish dressing and serve.
