Ingredients
- Freshly squeezed lemon juice 3 tablespoons
- Red Wine Vinegar 1 teaspoon
- Anchovy paste 1 teaspoon
- Extra virgin olive oil ½ cup
- Sea Salt to taste
- Arugula 5 oz
- Fennel 1 head
- Pitted olives ⅓ cup
- Grated Parmesan cheese 10 oz
Step-by-Step Guide
Step 1
To prepare the fennel and arugula salad, mix the juice, vinegar, and paste in a small bowl. Slowly drizzle in the oil. Season with sea salt and pepper.
Step 2
Cut the fennel in half and slice it very thinly.
Step 3
In a large bowl, toss together the arugula, fennel, and olives with the dressing. Top with cheese. Serve immediately.
