Feijoa-Lime Infusion
Ingredients
- Feijoa 5 lbs
- Orange zest 0 oz
- Vodka 0 qt
- Caramel Syrup 0 fl oz
- Sugar 0 oz
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Wash the feijoa and trim the ends.
Step 3
Place the feijoa in a vacuum bag and add the lime zest.
Step 4
Pour the vodka into the bag and vacuum seal it.
Step 5
Place the bag in a sous-vide at 149°F (65°C) for 2.5 hours.
Step 6
Cool the infusion completely before opening the bag.
Step 7
Filter the infusion through a very fine mesh, such as a cheesecloth.
Step 8
Add the simple syrup and sugar to the infusion, and mix well.
Step 9
Pour the infusion into bottles.
Step 10
Serve the infusion chilled.
