Farro salad with tomatoes

Ingredients

  • Spelt 5 oz
  • Spanish onions 1 head
  • Red Wine Vinegar 2 spoons
  • Tomatoes 4 pieces
  • Arugula 0 oz
  • Cucumbers 1 piece
  • Basil 0 oz
  • Olive Oil 4 spoons
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

In a large saucepan, combine the spelt with six cups of water, season with salt to taste, and cook until tender, about forty minutes. Remove from heat and let cool for thirty minutes.

Step 2

In a bowl, combine the coarsely chopped onion and vinegar, and let it sit at room temperature.

Step 3

Add the cooled spelt to a bowl along with the deseeded and roughly chopped tomatoes, finely chopped cucumber, chopped herbs, and all the other ingredients. Mix well and serve immediately.
