  • Dijon Mustard 2 teaspoons

  • Escarole 20 oz
  • Apple 1 piece
  • Chopped almonds ½ cup

Step-by-Step Guide

Step 1

Remove any old leaves from the escarole and tear it into small pieces by hand. Cut the apple in half, core it, and slice it thinly.

Step 2

In a large bowl, combine the olive oil, vinegar, and mustard. Season with salt and pepper. Add the escarole, apples, and pecans. Toss and serve immediately.
