Endive, arugula, orange, and walnut salad
Ingredients
- Oranges 2 pieces
- Orange juice concentrate 2 tablespoons
- Olive Oil 2 tablespoons
- Champagne Vinegar 1 tablespoon
- Walnuts 2 teaspoons
- Orange zest ½ teaspoon
- Endive 4 heads
- Arugula 1 bunch
- Roasted Peanuts 0 oz
Step-by-Step Guide
Step 1
Using a sharp knife, peel the oranges, removing the skin and white pith. Slice them into thin rounds crosswise and then cut each round in half.
Step 2
In a bowl, combine the juice, olive oil, vinegar, walnut oil, and zest. Season with salt and pepper to taste.
Step 3
In a large bowl, mix the endive, arugula, and orange pieces. Add the dressing and toss well. Sprinkle with roughly chopped walnuts and serve.
