  • Eggplants 4 pieces
  • Red Long Chili Peppers to taste
  • Vegetable Oil 2 tablespoons
  • Garlic 2 cloves
  • Black Cumin (Cumin) to taste
  • Meyer Lemon Juice 2 tablespoons
  • Carrot 1 piece
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the eggplants and carrot into cubes (cut the carrot smaller) and boil in salted water, adding minced garlic and ground red pepper. Add salt.

Step 2

Drain the excess water from the eggplants and carrot. Dress with vegetable oil and lemon juice. Sprinkle with cumin.
