Eggplant Salad with Capers
Ingredients
- Eggplants 3 pieces
- Garlic 2 cloves
- Marinated cherries 10 pieces
- Capers 2 tablespoons
- Basil 1 bunch
- Olive Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Balsamic Vinegar 1 tablespoon
Step-by-Step Guide
Step 1
Peel the eggplants, slice them into thin strips, and bake for 30 minutes in the oven, previously greasing the baking sheet with olive oil.
Step 2
Cut the cherry tomatoes in half, chop the garlic, and add them to the eggplants for 10 minutes.
Step 3
When the vegetables cool down, add chopped basil and capers. Drizzle with balsamic vinegar.
Step 4
Dress the salad with olive oil. Season with salt and pepper.
