- Eggplants 10 oz
- Tomatoes 10 oz
- Garlic 1 clove
- Basil 0 oz
- Vegetable Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Balsamic Vinegar 2 spoons
- Parsley to taste
Step-by-Step Guide
Step 1
Boil the eggplants until they are half cooked, then fry them in vegetable oil. Once cooled, slice the eggplants into thin pieces. Roll each slice into a small roll.
Step 2
Slice the tomatoes after removing the pulp. Combine them with the eggplants.
Step 3
Chop the garlic and add it to the eggplants.
Step 4
To prepare the dressing, whisk together vegetable oil and balsamic vinegar. Add finely chopped basil, salt, and pepper. Garnish with sprigs of fresh parsley.
