Ingredients
- Eggplants 3 pieces
- Courgette 3 pieces
- Orange Bell Peppers 2 pieces
- Tomatoes 2 pieces
- Salt to taste
- Vegetable Oil 1 tablespoon
- Garlic 2 cloves
- Red Long Chili Peppers to taste
- Lemon 1 piece
Step-by-Step Guide
Step 1
Cut the eggplants and zucchini into small pieces, soak them in cold salted water, and cook, adding salt, ground red pepper, and garlic.
Step 2
Peel the tomatoes, cut them in half, and remove the seeds. Add them to the eggplants and zucchini.
Step 3
Remove the seeds from the bell peppers and sauté them in vegetable oil. Add to the vegetables and simmer until the liquid evaporates completely.
Step 4
Serve the salad chilled with lemon wedges.
