Eggplant and Tomato Salad
Ingredients
- Eggplant 1 piece
- Tomatoes 2 pieces
- Red Onion to taste
- Herbs to taste
- Rice Vinegar to taste
Step-by-Step Guide
Step 1
Slice the eggplant into 1 cm thick rounds. Sprinkle with salt and let sit for about 5 minutes to draw out the bitterness. Rinse with water and squeeze out excess moisture.
Step 2
Slice the onion into half-rings, pour rice or balsamic vinegar over it, and let sit for about 5 minutes.
Step 3
Chop the tomatoes and place them on a plate. Top with the onion.
Step 4
Grill the eggplant on a grill pan, cut into strips, and place on the plate with the tomatoes and onion.
Step 5
Add your favorite herbs (such as cilantro), a little olive oil, and season with salt.
