Eggplant and Mozzarella Salad
Ingredients
- Eggplants 2 pieces
- Arugula 1 bunch
- Corn Salad 1 bunch
- Marinated cherries 1 piece
- Pizza Mozzarella Cheese 5 pieces
- Garlic 1 clove
- Ocean salt to taste
- Ground Black Pepper to taste
- White Balsamic Cream to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Wash the eggplants, dry them, and roast them whole in the oven (20–25 minutes). Remove, let cool slightly, peel, and cut the flesh into small cubes.
Step 2
Place the leaves of corn salad and arugula on a plate. Top with the eggplants.
Step 3
Crush the garlic and mix it with a small amount of olive oil. Add the oil to the salad.
Step 4
Cut the tomatoes into small wedges, slice the mozzarella into small rounds, and arrange them on the salad.
Step 5
Dress the salad with a small amount of balsamic sauce, and add salt and pepper to taste.
