Egg Toasts in Sweet Peppers

Ingredients

  • Olive Oil 2 teaspoons
  • Sweet Pepper 1 piece
  • Coarse Salt to taste
  • Large eggs 4 pieces
  • Ground Black Pepper to taste
  • Sourdough Bread 10 oz
  • Grated Pecorino Pepato Cheese 2 teaspoons
  • Mixed salad greens 8 cups

Step-by-Step Guide

Step 1

Remove the seeds from the pepper and cut it into 4 thick rings.

Step 2

In a large skillet, heat 1 teaspoon of olive oil over medium heat. Place the pepper rings in the skillet and crack 1 egg into the center of each. Season with salt and pepper. Cook for 2–3 minutes, then gently stir and cook for another minute until done.

Step 3

Sprinkle with Parmesan and place on slices of bread (you can toast them in a toaster).

Step 4

In a bowl, mix the salad greens with the remaining olive oil, season with salt and pepper. Arrange on plates. Top with the bread and eggs.
