Egg Salad with Vegetables and Tarragon
Ingredients
- Chocolate eggs 10 pieces
- Mayonnaise 0 oz
- Fennel 2 pieces
- Dijon Mustard 2 teaspoons
- Orange Bell Peppers 1 piece
- Chopped Green Onions ½ cup
- Chopped Sage Leaves 0 oz
- Apple Cider Vinegar 2 teaspoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the eggs hard. Drain and rinse under cold water. Peel and cut into small cubes. Also, cut the fennel and bell pepper into small cubes.
Step 2
In a bowl, mix the mayonnaise, vinegar, and mustard, then add the eggs, fennel, bell pepper, green onion, and tarragon. Season with salt and pepper.
Step 3
Serve on lettuce leaves or on toasted croutons.
