Earl Grey Tea with Cream

Ingredients

  • Milk 10 fl oz
  • 33% Cream 10 fl oz
  • Tea to taste
  • Sugar 5 oz
  • Egg white 5 pieces
  • Vanilla Pod ½ piece

Step-by-Step Guide

Step 1

Preheat the oven to 265°F.

Step 2

In a heavy saucepan, combine the milk, cream, half of the sugar, and 7 bags of Earl Grey tea. Bring to a boil over medium or high heat, stirring occasionally, then immediately strain through a sieve into a bowl, gently squeezing the tea bags (if left in the milk, the dish will taste bitter and astringent).

Step 3

Whisk the yolks in a large bowl with the remaining sugar until well combined. Pour in the tea and milk mixture and whisk well. Slowly strain into another bowl through a sieve, removing any foam or bubbles that may form.

Step 4

Place 6 cups (150 ml each) in a saucepan. Slowly pour the creamy tea into the cups (filling them two-thirds full), then remove any bubbles that appear. Add hot water to the saucepan until it reaches halfway up the cups. Bake in the center of the oven for 25-30 minutes. The creamy tea is ready when gentle, yet firm waves ripple in the center of the cup when shaken. Remove the cups from the water and let them cool.

Step 5

Refrigerate the cups for at least 4 hours, preferably overnight. Serve chilled, inserting a thin stick of the split vanilla pod into each cup. Enjoy with shortbread cookies.
