
Daikon Salad

Description
This salad can be stored in the refrigerator for no more than a day. You can substitute the pea pods with flat green beans or frozen peas, thawing or boiling them for no more than 5 minutes in a steamer or 3 minutes in boiling water.
Ingredients
- Daikon 20 oz
- Sweet Red Onion 1 head
- Snap Peas 5 oz
- Sesame Oil 2 spoons
- Rice Vinegar for Sushi 2 spoons
- Black sesame seeds 2 spoons
- Honey 2 spoons
- Soy Sauce to taste
Step-by-Step Guide
Step 1
Peel the daikon like you would a carrot or potato. Grate it on a coarse grater into long strips.
Step 2
Slice the onion into thin half-rings.
Step 3
Cut the pea pods crosswise into pieces about 2 cm wide.
Step 4
Mix the vegetables together.
Step 5
Whisk together sesame oil, rice vinegar, and honey. Dress the vegetables with the sauce and refrigerate for an hour to allow them to marinate.
Step 6
Serve sprinkled with black sesame seeds and accompanied by soy sauce.
