Cucumber Salad with Grilled Tomatoes and Feta
Ingredients
- English cucumber 3 pieces
- Salt ½ teaspoon
- Red Wine Vinegar 2 tablespoons
- Olive Oil 3 tablespoons
- Dijon Mustard 1 tablespoon
- Sugar 1½ teaspoons
- Tomatoes 3 pieces
- Spanish onions 1 head
- Chopped Sage Leaves 2 tablespoons
- Ground Black Pepper to taste
- Feta cheese ¾ cup
Step-by-Step Guide
Step 1
Cut the cucumbers in half and remove the seeds. Slice them into thin pieces and transfer to a large bowl. Sprinkle with ½ teaspoon of salt and let sit for 30 minutes. Then place them on a paper towel and dry well. Transfer to a clean, dry bowl.
Step 2
In a small bowl, mix the vinegar, 2 tablespoons of olive oil, Dijon mustard, and sugar. Drizzle the dressing over the cucumbers, mix well, and refrigerate.
Step 3
Preheat the grill.
Step 4
Cut the tomatoes in half and scoop out the seeds. Cut into small segments and brush with the remaining olive oil. Place on the grill and cook for about 30-60 seconds on each side. Transfer to a plate and let cool. Cut into small pieces.
Step 5
In the bowl with the cucumbers, add the tomatoes, finely chopped red onion, parsley, and black pepper. Mix well and transfer to a serving bowl. Top with feta cheese and serve.
