Bulgur is an excellent base for a salad, and in contrast to the grain, you immediately want to add a variety of fresh ingredients, including fresh cucumber.
Ingredients
- Sweet Pepper 1 piece
- Bulgur 0 oz
- Cucumbers 20 oz
- Lemon 2 pieces
- Feta cheese 5 oz
- Olive Oil 0 fl oz
- Natural Yogurt 10 fl oz
- Scallions 0 oz
- Fresh Mint 0 oz
- Parsley 5 oz
- Ground Black Pepper to taste
- Flaky sea salt a pinch
Step-by-Step Guide
Step 1
Finely chop the parsley, mint leaves, and onion. Soak the bulgur in a mixture of oil and lemon juice for two hours. Alternatively, you can lightly cook the bulgur first, then mix it with the oil and juice and let it cool.
Step 2
Slice the cucumbers into matchsticks and the bell pepper into cubes. Make a sauce from yogurt, lemon zest, and feta, season with salt and pepper, and mix with the vegetables, herbs, and bulgur.
